On the Aggregation Landscape of Pea and Whey Protein Isolates : Investigating the Effects of Temperature, Storage, pH, and Humidity
Over the past decade, the consumption of both protein powder has gained popularity among younger populations. This has led to burgeoning research on the protein aggregates they form under various environmental conditions. This study exposed multiple protein samples to different conditions like heat, pH levels, and storage times, and employed five biophysical techniques to examine the results of the aggregation mechanism.
